MOST MAGICAL MUFFINS
This recipe isn’t our own, but made by the incredibly talented and inspiring gluten-free baker @blomstrandeglutenfritt (and you can find more of her recipes on her website).
And it truly makes the most magical muffins. Both incredibly light and moist. And they keep for up to three days.
Whether as plain muffins, or filled - you won’t regret baking these either. All you need is a bag of of our Pizza Mix. Actually, you only need about 1/3 to make 10-12 muffins.
PLAIN MUFFINS RECIPE
- 165 g OhAh Pizza Mix
- 100 g browned butter (filtered & cooled down)
- 180 g caster sugar
- 2 eggs
- 1,5 tsp vanilla sugar
- 1 dl milk
- 1 pinch salt
- 1,5 tsp baking powder
Preheat the oven to 200 degrees
In a separate bowl mix flour, salt and baking powder
Whip egg and sugar together to a fluffy, airy mix.
Pour in the butter, milk and vanilla powder and mix.
Pour in the dry mix (gently) and make into a batter.
Done.
Preferably use a muffins/cupcake tray WITH paper cups as well. Fill the cupcake / muffin paper / baking cups to max 2/3. Especially if you want to fill them you’ll need the space :-)
Bake for 2*9 minutes (total 18 minutes) turning the tray halfway after 9 minutes to get an even bake.
Take out from the oven and leave to cool. ENJOY.
APPLE & CRUMBLE MUFFIN
Make the plain muffin batter.
APPLE FILLING
Separately dice one apple and fry in 1 tbsp butter for about 5 minutes. Add 2 tbsp caster sugar to caramellize (approx 5 minutes as well). Finally add 1,5 tsp ground cinnamon, heat for about minute and then turn off the heat. Once cooler, take about 1 table spoon and pour into each muffin and push down the apple mix into the batter.
CRUMBLE
25 g butter + 0,5 dl glutenfree oats + 35g OhAh Pizza Mix + 1 tbsp brown sugar. Mix together with a fork or your hand - until it’s a crumbly mixture. Crumble over the apple muffins and bake according to the recipe (18 minutes).
