MAMMA MIA - FRESH PASTA

This pasta has a bit of stretch, a bit of bite (in a good way), doesn't stick together and doesn't fall to pieces. Unbelievable. But true! Now this gluten-free fresh egg pasta is made with our Buns & Brioche mix - which narrowly came out the winner just ahead of our Toast & Baguette mix. But you can substitute if you want - the recipe is the same

A 400 g bag will give you a bit more than 700g fresh pasta which is enough for 5 people (even 6 if you have a bit of a heavy/meaty sauce). 

  • 400 g of Buns & Brioche mix
  • 2 whole eggs + 8 egg yolks (=255 g)
  • 30 ml / g water
  • 1/2 teaspoon salt

We use an Ankersrum with the roller - it’s a bit too heavy work to work this dough by hand.

Pour in the egg and start mixing. Add half the flour. Add the salt. Add the remaining flour. Scrape down the sides and the roller. Add the water. Continue to work the dough until it’s nice and uniform. Take it out (scrape off everything) and work it a little by hand. Cover in plastic and let sit for 10 minutes.

Divide the dough into 8 balls. Flatten one with the palm of your hand and roll it through a pasta machine (or with a rolling pin) - setting #1. It will come out in bits. Don’t worry.

Make a nice puzzle out of all the bits and put them together in a rectangular shape. Run the dough sheet through the machine (still setting #1) fold it in half and run through the machine again. Now fold in the sides to the middle and run through the machine. Now turn the dial on the machine to setting #2 and run the dough through. You may want to fold the dough again and run through. If not continue to setting #3, then #4 and finally number #5. We prefer our pasta a bit thicker - but the dough is both strong and easy enough to go to #6 (out of 7).

Run the thin sheet through the pasta cutter (we usually make tagliatelle) and lift into in a big tray with a bit of rice flour in our. You can lift up and turn the pasta around so it gets a bit of flour on it. Boil directly or leave until you need to eat.

Boil for 4-5 minutes in salted water.

Enjoy with any sauce that you like.
