TASTY, CRISPY DIGESTIVES
We think we are pretty close to the digestive taste and texture - unlike the store bought ones that taste and feel like you're eating sand or plywood. Even without using additional oatmeal/oat flour - only pure gluten-free oats + our Pizzamix. We also have a vegan version (which uses our Buns & Brioche mix - see further below)
A full 400 g bag makes between 45-50 digestives (of 30 or 25 grams each, pre-bake weight).
- 400 g OhAh Pizzamix
- 225 g diced butter
- 265 g oats (GF)
- 265 g sugar (we do half brown sugar / half caster sugar)
- 7 g baking soda (bicarbonat)
- 2 eggs
- 5 g salt
Preheat the oven to 190 degrees Celcius.
Mix all dry ingredients together. Add the butter and make a crumble (we use a big fork). Add the eggs and mix (with a baking spatula).
Divide the dough into three pieces. Place one piece on a baking/parchment paper and place another paper on top. Roll out the dough (between the two baking paper) to 3-4 mm with a rolling pin. Cut the cookies with either a class or a steel ring to the size of digestives and lift over with a thin metal spatula to a new baking paper.
Bake for 2*5-6 minutes (10-12 minutes total), turning the baking sheet once to get an even bake.
Leave to cool on a rack. ENJOY!
VEGAN VERSION:
- 400 g OhAh Buns & Brioche
- 225 g diced plant-based butter
- 265 g oats (GF)
- 265 g sugar (we do half brown sugar / half caster sugar)
- 3 g baking soda (bicarbonat)
- 135 g water
- 5 g salt
