CHEWY DOUGH BALLS - JUST LIKE PIZZA EXPRESS (BETTER?!)
If you've enjoyed eating Pizza Express glutenfree dough balls - then you'll enjoy this recipe. Actually we think their GF dough balls are so much better than their GF pizzas (Psst Pizza Express - give us a call and we'll help you make a better GF pizza base :-)).
A full bag of Pizzamix (400g) makes 32 dough balls - so here's the recipe adapted for different amounts of dough balls to fit your dinner plans:
For the dough:
Dissolve the sugar and yeast in the water. Add the olive oil.
Mix in the flour in two steps - you can do this by hand with a spatula (as long as it's sturdy enough to beat the dough around), or use a mixer with a roller (ankersrum) or paddle.
Add in the salt and mix a bit more.
Leave the dough to rest for 15 minutes.
With oiled hands, rolls the dough into a log and cut into the # dough balls as per above recipe. Roll and place on parchment paper (on a baking tray). Leave to rise/proof for 30-40 minutes and turn on the oven at 230 degrees Celcius.
Once proofed, turn on the broil/grill in the oven (still 230 degrees C) and place the baking tray in the oven. Bake for 6 minutes; turn the baking tray and bake for another 2-3 minutes. Done
Take out and enjoy with your choice of dipping sauce or garlic butter (with oregano).
