CRISPY, GOLDEN, GLUTEN-FREE CHURROS!
400 grams of pizza mix makes for a ton of churros :-) Actually half the amount would probably be enough for a good dessert for 4 people, but if you're into churros like we are, then a 400g bag is perfect.
In addition to the 400 grams of pizza mix, you will need:
- 160g water
- 160g milk (3%)
- 5g salt
- 30g sugar
- 125g butter
- 3 eggs
- Rapeseed oil for frying the churros
- Sugar or cinnamon+sugar for coating the churros
- Chocolate sauce, hazelnut spread or dulce de leche (as you prefer)
HOW TO PREPARE THE CHURROS BATTER
Put the water, milk salt, sugar and butter in a pan and heat so that it’s almost boiling. Turn down the heat and add in the flour mix and mix together - it will get quite thick & heavy. Turn off the heat.
Pour in oil in a large pan (approx 3cm oil) and start heating it up slowly (to about 190 degrees celsius).
Whilst the pan with the oil starts to heat up, you need to mix the thick dough with a handmixer with hooks for about 5 minutes.
After 5 minutes, add one egg and mix in well with the dough. Add the second egg and mix in well. And finally add the third (and final) egg and mix in well.
Ready.
Transfer the dough batter to a piping bag fitted with a star-shaped ”spritz”.
Once the oil is warm enough, spritz in a 8-10 cm length of the dough (you’ll need to cut it with a knife or a pair of scissors) and continue to fill the pan with churros. Turn them over when they get golden brown so you fry them on both sides.
Once ready, take them out and let them drip off on a thicker piece of paper towel. But quickly transfer them to a prepared bowl with sugar and cover the hot churros.
Serve, eat and enjoy immediately
