Pop-tarts

A WONDERFUL BUT LESS THAN HEALTHY SNACK :-) !


So this morning we woke up and thought…. Hmmm let’s make pop-tarts. So we got inspired by the recipe from mamaknowsglutenfree.com - and it works really well with our Pizza mix.

This recipe makes 8 pop-tarts.

  • 400 g OhAh mix
  • 115g frozen butter (grated)
  • 100g fridge cold coconut oil (fat)
  • 60g sugar
  • 1/2 tsp salt
  • 2 eggs (large)
  • 1/2 teaspoon apple cider vinegar
  • 6 tbsp ice cold water
  • 16 teaspoons seedless jam

And then eggwash (1 egg + 1 tbsp water).

Mix together the dry ingredients (flour mix, salt, sugar). Grate the frozen butter and ”crush” the cold coconut fat in small pieces. Add to the dry mix and with a paddle- or roll -mixer, incorporate the fats into the dry mix. It’ll basically end up as a dry crumble, but make sure you the crumble is on the finer side…. But still move quickly so the fats don’t start to melt.

Add the egg, apple cider vinegar and water and mix together for a few minutes. Though a bit sticky, it’s still easy to handle. Roll into a ball, cover in plastic and place in the fridge for at least 45 minutes.

Once cold, take out, cut into two equal pieces (place one in the fridge while you work the first half). Roll into a rectangle approx 5-6mm thick, 15cm wide and about 30 long. Cut into four equal pieces and place on a baking paper and place in the fridge. Do the same with the other half of the dough.

Now take out the pieces and fill 4 of the pieces with jam (2 tsp per piece). Place another piece on top, squeeze together the edges (properly) and finally use a fork to crimp the sides + poke the fork into the top and make three sets of holes.

Brush with egg wash and bake in the oven at 175 degrees C for 25 minutes. Take out, cool for 5 minutes on the baking tray and finally move to a cooling rack.

If you want - once cool - glaze the pop-tart and maybe even add some sprinkles.

GLAZE

  • 120 g icing / powdered sugar
  • 1/2 tsp vanilla extract
  • 2 tbsp water
