GOLDEN, BUTTERY AND JUST THE RIGHT SUGAR CHEW AND CRUNCH !
These kolasnittar are the closest thing you get to Swedish cookie royalty….. and looking at them (and tasting them), you wouldn’t know they’re gluten-free. They’re that good.
Making these with a 400g OhAh Pizzamix will get you 48 kolasnittar. You’ll eat at least 4-6 each :-)
- 400 g Pizza Mix
- 2 tsp baking powder
- 2.5 tsp vanilla sugar
- 260 g soft (room temp) butter
- 200 g granulated sugar
- 65 g light/white sirap
Heat the oven to 175 degree (fan / convection).
Mix together the flour mix, baking powder and vanilla sugar.
In a larger bowl, mix/whisk together the soft butter, sugar and sirap - to a creamy consistency (not ”fluffy” - just creamy).
Mix in the dry ingredients - you can do this first with a spatula, then with your hand, or in a mixer with a paddle. The dough will come together - and it’s soooo nice to handle.
Cut into 4 pieces (approx 230 g) and roll each into a log of approx 30 cm long and 3 cm thick. Place two each on a baking paper/parchment and give it a bit of squeeze (to approx 2 cm high). Do the same with the last two and place on a separate baking tray.
Place the two baking trays in the oven and bake for 2*9 minutes, turning the trays halfway to give the kolasnitter an even bake.
Take the trays out from the oven, and immediately cut them (at an angle) and leave to cool. It’s difficult to not want to eat them directly…. But trust us - they only get better.
